Shahi Aloo Kofta…rich aloo kofta in mugali style…

Hi….

Here is yummy aloo kofta … not ordinary …its Shahi Aloo Kofta…

The ingredients are for 4-5 persons

For Koftas :

  • 1/2 Cup. Boiled, peeled and mashed potatoes
  • 1/2 cup Besan (Gram flour)
  • 1 tbsp. chopped cashews (Kaju)
  • 1 tbsp. Kishmish (golden raisins)
  • 1/4 cup  yogurt (dahi), hung
  • 1/4 cup mava
  • Oil for frying
  • Salt to taste
  • Red chili powder to taste

For Gravy :

  • 2 medium size onions
  • 1 inch piece of fresh ginger
  • 6 cloves of garlic
  • 1/2 cup scraped coconut
  • 3/4 cup yogurt (dahi), beaten
  • 3-4 tbsp Oil
  • 1/2 tsp. sugar
  • salt to taste
  • Red chilli powder to taste
  • 1/2 tsp. turmeric powder
  • 2 tsp. coriander powder
  • Gram masala powder to garnish
  • 2 tbsp. finely chopped fresh coriander

Preparation:

  • Roast khoya in a heavy pan till golden in colour. Now add besan and roast.
  • In a bowl add this roasted mixture and add mashed potatoes, hung yogurt, chopped cashews, raisins, salt and red chili powder and mix well.
  • Heat Oil in a deep pan for frying the koftas. In the meantime, Form the mixture into balls. On a medium flame, deep-fry these balls till golden. Drain onto an absorbent paper and keep aside.  (if u want u can taste one kofta….but only one otherwise u’ll keep eating them as they are so rich in taste …mouth melting…)
  • Now, in a blender add onions, ginger, garlic and coconut and make a smooth paste.
  • For gravy, heat 3-4 tbsp. oil in a pan and add the paste and saute till golden brown. Now add turmeric powder, corriander powder and red chilli powder. sprinkle little water. saute for a few seconds  and yogurt and salt and sugar. Keep stirring. Once the masala starts leaving oil add one cup of water and stir well till it starts to boil.
  • Simmer and let it cook till gravy is little thick or of desired consistency.
  • Just before eating, place the fried koftas in a serving dish and pour the hot gravy over and serve immediately garnished with garam masala powder and chopped coriander.    You can have this shahi kofta with paratha, roti…. but best suited with naan….  enjoy !!!!

Malai Kofta – Potato-Paneer Balls in a Rich Creamy Gravy

Hi…. here is one mouth watering recipe which i would love to share with u all….

This preparation is for 5-6 persons..

For Koftas :

  • 2 Potatoes, Boiled, peeled and mashed
  • 75 gms. Paneer, grated
  • 1tsp. Green chillies, chopped
  • 25 gms. Raisins (Kishmish)
  • Salt to taste
  • 1/4 cup Corn Flour
  • 1/4 tsp. red chilli powder
  • Oil for frying

For Gravy :

  • 2 medium size boiled Onions, paste
  • 1 tbsp. each gine-garlic paste
  • 1/2 tsp. green chillies, finely chopped
  • 1 large Tomato, pureed
  • 1/2 cup Khoya (Mawa)
  • 1/2 cup fresh cream or heavy whipped cream
  • 1 tsp turmeric powder
  • 2 tsp. coriander powder
  • 1/2 tsp. red chilli powder or to taste
  • 1/4 tsp. sugar
  • Salt to taste
  • 1/2 tsp. Garam masala powder
  • 2-3 tbsp. Oil

Variation : Milk powder can be used in place of khoya

Preparation:

  • For koftas, mix all the ingedients of koftas together and divide into  equal portions .Shape into long rolls and suff raisins into each roll, (ohh…i love the sweet taste of raisin mixed with other spices) deep-fry in hot oil until cooked. Drain onto an absorbent paper and keep aside.
  • Heat oil in a pan and add boiled onion paste and cook  till golden brown. Add  the ginger-garlic paste and stir-fry for few seconds. Add turmeric powder, corriander powder, red chilli powder and salt, stir-fry for few seconds. Stir in tomato puree and add sugar and garam masala powder. Cook on high heat, stirring continuously till oil begins to separate.
  • Now in 11/2 cups of water dissolve khoya or milk powder. Add to the gravy. Bring to boil. Simmer  and cook for 5-10 minutes or until desired consistency. finish with fresh cream.( also get your self prepared for uninvited guests….the reason is aroma of the gravy…  🙂 )
  • Just before eating, place the fried koftas in a serving dish and pour the hot gravy over and serve immediately garnished with fresh stirred cream. (Presentation works a lot….) enjoy !!!!!
